Traditional Eggnog
The 12 Days of Christmas Mocktails Day 12!
This is it kids. We haven't run out of ideas, or drinks, but we had to stop some time!
I have been making this recipe every Christmas for as long as I can remember. Yep. That long. It is a little fiddly, but the delicious airy result is worth the effort. You can enjoy with or without the alcohol, up to you. Given the time of year and all, no one will blame you if you are sloshing it around a bit. Don't over do it though as you could curdle the creaminess of the whole nog, and then the merriment could end! We love adding Lyres American Malt to the mix as it duplicates the whiskey with none of the whiskey business!
If you are concerned about drinking raw eggs, whip the whites as directed, then the yolks immediately afterwards with the same heat. Then follow the rest of the recipe as directed.

Try adding any of the following to bring it to the next level;
Freshly grated lemon or orange rind or the equivalent of essential oils.
Star anise.
Very strong espresso.
Very strong Brew Choc.
Crushed candy canes or peppermint oil
Amaretto.
A little dried chilli powder!

Need
- 6 egg whites
- 1 Teaspoon cream of tartar
- 120 Grams raw caster sugar BUY
- 1 tonka bean BUY
- 500 Grams cream BUY
- 2 Teaspoons vanilla bean paste BUY
- 4 egg yolks
- 500 Grams ice cold whole milk
- 1 Pinch ground cinnamon
- 1 Pinch fresh nutmeg
- Dash rum, brandy, whiskey or bourbon optional

Place egg whites, and cream of tartar into Thermomix bowl and beat 6 min/50°C/Butterfly/speed 3/MC off. Set whites aside in large bowl. Remove Butterfly.

Place sugar and tonka bean into clean dry Thermomix bowl and mill 4 sec/speed 10. Add cream and vanilla to Thermomix bowl. Whip 15-40 sec/Butterfly/speed 4 until stiffened. Add egg yolks and whip 3 sec/speed 3.

Add mixture to beaten whites.

Add milk to the whole mixture and fold everything together until you have an even but light consistency. Garnish with cinnamon, freshly grated nutmeg and add alcohol as desired.
