Santa's favourite drink, Egg Nog is a tradition at Christmas time the world over. Try this chilled non-dairy version, perfect for our heat and loved by kids and big kids alike!
We have been having a lot of this lately as it was the star welcome drink for all of our Merry Christmix classes, if you missed out, there is always Christmas 2017! (Which as you know will be here in a flash.)

- 80 g golden caster sugar
- 2 400g coconut milk
- 3 large eggs
- 2 tsp Vanilla - Bean Paste Vanilla bean paste BUY
- 10 Drop doTERRA - Peppermint Oil doterra peppermint oil BUY
- 400 mls tin coconut cream, refrigerated
- Peppermint Candy Canes to garnish
Place sugar, coconut milk, eggs and vanilla into TM bowl and cook 8 min/80°C/speed 4.
Cook 2 min/90°C/speed 4.
Pour into a container, place a piece of baking paper onto the surface of the custard and allow to cool completely. Refrigerate.
Return custard to TM bowl and add the top solid layer of the coconut cream, reserving the clear liquid for another use. Add peppermint oil and combine 8 sec/speed 4.
Keep chilled until ready to serve.
Serve with a candy cane in each glass or crush the candy canes and sprinkle on top as a garnish.
This recipe freezes really well to become a delicious dairy free ice cream.
