Sourdough Apple bites
Sometimes we just have to treat ourselves as well as the kids. My homemade sourdough starter sitting there always has me itching to create more for the kids to enjoy. So here are some apple sourdough bites! A little fritter that would go very well with cream or ice cream. They do contain sugar! They will be eaten quickly! They are great for lunch boxes as school goes back (here in Victoria anyway) Enjoy!

Need
- 1 Large Peeled and cored red apple
- 70 Grams raw caster sugar BUY
- 2 Tablespoons bakers or strong flour
- 1/2 Teaspoon ground cinnamon
- 1 Tablespoon Baking Powder
- 260 Grams Sourdough starter (active and fed)
- Icing Sugar for dusting as needed
- coconut oil as needed

Place peeled and cored apple into bowl 10 sec/speed 5.

Scrape bowl down and add sugar, flour, cinnamon, baking powder, sourdough starter mix for 8Sec/speed3 or until well combined

Preheat oven at 200°C fan forced.

Let mix sit for 30 mins (you want to see a rise and plenty of bubbles).

Get a 24 mini cupcake oven tray and grease generously with coconut oil.

Give the batter a gentle stir to make sure apple isn't sitting on the bottom and divide mixture into all of the tray holes.

Place in oven for 8-12 minutes or until golden and fragrant.

Dust with icing sugar and enjoy!

An alternative is to shallow fry them on the cook top in coconut oil.
