The little wafer that could! You will just love these for the quickest little dress the cheese platter-upper-rer ever! Whip up a batch and then pretend you slaved over a hot Thermomix all day! SO impressive.

I also have added some cumin, coriander, garlic to these before and used them as mini taco shells! Just cute as for a finger food. Let your imagination run wild. Easily doubled, or even quadrupled. Go and enjoy...just don’t burn yourself on the molten cheese.

Preheat oven to 170°C and line a baking tray with paper. You can only do one tray at a time, which becomes apparent when you watch the video.

Place zest, parmesan and cornflour into Thermomix bowl and mill 10 sec/speed 8.

Place spoonfuls onto tray and bake 6-7 minutes until golden and just crispy around the edges.

Serve as part of a cheese platter, with pesto, dips or as a great accompaniment to soup.
