In the haze of post Christmas leftovers this is the perfect way to feed everyone!

As we all come round from our post Christmas foodie coma, this is a little bit different and the perfect way to use up your leftovers (or a portion of your leftovers). It is very delicious and easy to do, please do use our bread roll recipe. Use your favourite oven proof dish, lined with baking paper.

Then think outside the box, use up your ham this same way, but add some mustard instead of cranberry sauce (though cranberry sauce and ham is a bit of a fave of mine too) or for leftover seafood, use cold bechamel sauce.

Family happy, mum happy, fridge a bit happier!

Merry day after Boxing day and beyond!

This recipe will always work well with any left over fillings, and also try it with croissant instead of the buns, though I couldn't say there will ever be leftover croissants in this house!

Need

  • 1 Batch Perfect Burger Buns Made into 12 buns in a square baking tin Recipe
  • left over turkey, (or ham or seafood)
  • left over gravy or bechamel sauce if using seafood
  • 200 Grams soft cheeses, use left overs from a cheese board if you have
  • 50 Grams Spiced Orange Cranberry Jelly or other cranberry sauce Recipe
  • 1 Handful fresh sage leaves (optional)
  • sesame seeds or other seeds of choice (optional)

Do

1

Pre-make the rolls well in advance.

2

Preheat the oven to 180°C.

3

Leaving the rolls attached to each other, cut them all the way through like one big roll. Return the bottom half of the rolls to the lined tin. This is not as easy as I make it sound, but it looks lush when you have finished anyway, so just go with it!

4

Place the cheeses into the Thermomix bowl and mill 5 sec/speed 8.

5

Layer half the cheese on top of the bread. Add some gravy, cranberry sauce and turkey, ham etc finishing with the remaining cheese.

6

Put the top half of the rolls back on top of all the fillings. Press down slightly. Scatter some sage leaves (or other leafy herbs) and seeds across the whole thing.

7

Cover with foil and then bake for 10-15 minutes until the cheese has melted and everything is hot. Remove foil and just crisp up for a few minutes before serving.
