Turkish Bread Rolls
Is there anything better than fresh Turkish bread? Other than fresh sourdough maybe? Cue the dukkah and the EVOO, you are ready to hummus it up!
Turkish bread is typically made with high-gluten flour, water, yeast, salt, and sometimes a small amount of sugar or olive oil. It may also include sesame or nigella seeds on top for added flavor and texture or as in this case, Bagel Seasoning.

Need
- 500 Grams bakers or strong flour
- 2 Teaspoons dry active yeast
- 1 Teaspoon raw caster sugar BUY
- 380 Grams warm water
- large Pinches pink salt flakes BUY
- 2 Tablespoons Extra Virgin Olive Oil (EVOO) as needed BUY
- 2 egg yolks
- 1/2 Batch Bagel Seasoning or as needed Recipe

Place flour, yeast and sugar into the Thermomix bowl. Combine 10 sec/speed 8.

Add water and salt. Mix 6 sec/speed 6. Knead 3 min/Interval.

Tip dough out into a large oiled bowl. Leave in a warm place for 1 hour to double in size.

Preheat oven to 230°C. Place baking tray or pizza stone into the oven to heat up.

On a floured bench, tip out risen dough. Divide into 6 portions.

Without overworking the dough, gently stretch each portion into a rectangle (the size of the roll you want). Place on individual pieces of baking paper.

With floured fingers, press fingers into dough all over, like with focaccia.

In a small bowl whisk the yolks and remaining EVOO. Brush this over the rolls then sprinkle with bagel seasoning.

Bake one at a time, on a hot tray for 7-9 minutes or until browned.
