Berry Mango Bruschetta With Whipped Ricotta
I love this simple recipe. It ticks a lot of boxes, flavour being first and foremost, but then simplicity, ease, quick, pretty, instagram worthy! You really can have it all! If you cannot source the freeze dried berries, by all means use totally fresh. You just get a bit of crunch with intense berry flavour with the freeze dried variety. They are becoming more widely available, so have a look and see if you can find them. Happy Breakfasting!

Need
- 1-2 Thermomix Brioche slices or panettone per serving, toasted Recipe
- 200 Grams ricotta cheese, well drained
- 2 Teaspoons vanilla bean paste BUY
- 30 Grams honey BUY
- 1 mango, peeled and sliced
- Plenty of Freeze-dried or fresh berries to taste
Do

Place cheese, vanilla and honey into Thermomix bowl and whip 1 min/speed 5.

Scrape down sides of bowl and around blade (honey may not incorporate) and repeat.

Spread on toasted bread, top with mango and berries prior to serving.

Ricotta mixture can be made night before and kept in fridge until morning.
