This is the best excuse to eat dessert for breakfast ever. Just saying. Who ever came up with the idea of panna cotta for breakfast was genius. I’m not claiming it, but we all do dairy for breakfast quite often, so this is just gelled dairy...with the most amazing granola, from Greedy Nanny’s. Refined sugar free, bursting with flavour and nutty goodness.

Place the water into a small bowl and stir the gelatin through. Set aside.

Place the coconut water, coconut cream, vanilla and salt into the Thermomix bowl and warm 5 min/70°C/speed 3.

Add the gelatin mixture and blend 1 min/70°C/speed 3.

Divide between your serving dishes. I like larger circumference that are more shallow for breakfast so you can fit more toppings on!

Refrigerate until set. Garnish with plenty of granola, fruit and even flower if you are an Instagrammer! (Don’t forget to tag me!)
