Breakfast Coconut Panna Cotta
This is the best excuse to eat dessert for breakfast ever. Just saying. Who ever came up with the idea of panna cotta for breakfast was genius. I’m not claiming it, but we all do dairy for breakfast quite often, so this is just gelled dairy...with the most amazing granola, from Greedy Nanny’s. Refined sugar free, bursting with flavour and nutty goodness.

Need
- 60 Grams water, room temperature
- 15 Grams powdered gelatin
- 250 Grams Coconut Water BUY
- 250 Grams coconut cream Recipe
- 2 Teaspoons vanilla bean paste BUY
- 2-3 Tablespoons Greedy Nannys Granola orange flavour, per serving BUY
- 200 Grams fresh raspberries
- date syrup/maple syrup/honey to taste
- Other fruit of choice to serve

Place the water into a small bowl and stir the gelatin through. Set aside.

Place the coconut water, coconut cream, vanilla and salt into the Thermomix bowl and warm 5 min/70°C/speed 3.

Add the gelatin mixture and blend 1 min/70°C/speed 3.

Divide between your serving dishes. I like larger circumference that are more shallow for breakfast so you can fit more toppings on!

Refrigerate until set. Garnish with plenty of granola, fruit and even flower if you are an Instagrammer! (Don’t forget to tag me!)
