Chewy Oatmeal Cookies
I do love a good chewy cookie. And then put some ice cream in between TWO of them. Hello! Pass the ice cream sandwich and no one will get hurt.
If you are going to have a cookie, with ice cream in it, then it should be this one. I do have loads of delish cookies on this site and scattered amongst my works, but this is a keeper. They don't freeze rock hard which is important with an ice cream sandwich. You can crack a tooth on some cookies, just saying.

Need
- 50 Grams shredded coconut
- 60 Grams pure maple syrup
- 50 Grams black molasses
- 120 Grams butter BUY
- 100 Grams buckwheat flour
- 1 Teaspoon bicarb soda
- 100 Grams rolled oats
- 1 Pinch pink salt flakes BUY
- 30 Grams mixed citrus peel
- 100 Grams raw caster sugar BUY
- 50 Grams raw sugar

Preheat oven to 160°C. Line 4 trays with baking paper.

Place coconut into the Thermomix bowl. Mill 10 sec/speed 10. Scrape bowl and lid and repeat. Set aside.

Place maple syrup, black molasses and butter into the Thermomix bowl and melt 5 min/90°C/speed 1.

Add remaining ingredients including coconut and blend 10 sec/speed 5.

Tip dough out onto a floured silpat mat. Shape into a log and refrigerate for 1 hour.

Roll into walnut sized balls and place on prepared trays. Leaving space between as they will spread.

Bake 6 minutes, turn trays and bake a further 4-6 minutes. Cookies will harden when cool.

Leave on the trays as they cool on a rack. Store in airtight container.
