Lemon Bliss Balls
These little snacks were created for a client's dessert box. If you are keen to order more than 150 of something, we are your people! But you can try these out and see what you think. Gluten free, dairy free, raw, delicious and just tell yourself they're healthy because they are! They are made in no time flat and are just great for ages if you keep them in the freezer...if you can resist them that is.
These lemon bliss balls combine the crunch of cashews, the tanginess of fresh lemons, the slight sweetness of coconut and the caramel notes of fresh dates. Zero nasties. If you are out of fresh dates, soak dried dates in some boiling water for around 20 minutes and proceed with the recipe. Same same, but cheaper!
These Lemon Bliss Balls are simply the BEST!
You can go which ever citrus you like best, or go with a mixture. They will also make cute presents for any time of year.

Need
- 200 Grams medjool dates, pitted
- 120 Grams cashews raw
- 70 Grams shredded coconut plus more for rolling
- 1 Tablespoon fresh lemon juice (or orange, lime, or mandarin)
- 1 lemons zest, finely grated
- 6 Drops doTERRA lime oil or wild orange, or lime or tangerine oil BUY
Do

Place all ingredients into the Thermomix bowl, blend 10 sec/speed 8.

Using wet hands, roll into walnut sized balls and coat in coconut. Keep refrigerated.
