Date Caramel
Sugar free date caramel is a great topping for just about any dessert, and the iterations are endless, see my suggestions below!
This Date Caramel is a delicious and healthy alternative to traditional caramel. The better the dates you purchase, the better the caramel. I made this initially with dried dates that I soaked in boiling water for 30 minutes. It took a while to come together in the Thermomix. But with medjool dates, the result is completely different. With its smooth texture, natural sweetness, and no added sugar, it’s perfect for anyone looking for a guilt-free treat. The combination of dates and a hint of vanilla creates a caramel sauce that’s rich, versatile, and ideal for various dishes. Ready in just minutes, this recipe will become your go-to for sweet indulgence without the sugar rush. I had some amazing butterscotch vanilla gifted to me from Heilala, but my favourite vanilla bean paste does the trick as well.
Add in Suggestions:
You can add ground cinnamon, ginger or other spices, ground coffee, brandy or rum (instead of extra water), cocoa, dash of maple syrup or honey, orange blossom water, orange zest to the blending phase. What will be your favourite?
Ways to use your Sugar-Free Date Caramel:
Drizzle over pancakes, waffles, or French toast for a naturally sweet topping.
Stir into yoghurt or porridge for a wholesome breakfast boost.
Use as a dip for fresh fruits like apple slices or strawberries. (I really love it on sliced Bravo apples, just such a treat!)

- 200 Grams dates pitted, fresh or dried
- 150 Grams boiling water
- generous Pinches pink salt flakes BUY
- 1 Teaspoon vanilla bean paste BUY
- 1/2 Teaspoon bicarb soda

Check that the dates are pitted. Even if the package says so. You need 200g after pitting.

Cover dates in 100g of the boiling water and if the dates are dried, I suggest you leave them for as long as you can and until all the water has been absorbed. Otherwise, 30 minutes is enough time.

Add soaked dates and any liquid, and all other ingredients other than remaining water to the Thermomix bowl and cook 5 min/80°C/speed 4. Scrape down lid and sides of bowl.

Blend 1 min/speed 7 as you add the remaining boiling water through the hole in the lid, much like adding oil into mayonnaise. Leave the MC in place and just add the water onto the lid.

Stop and scrape down if you wish. If you used dried dates, you may need more boiling water but don't go crazy.

Scrape into a jar and keep until use.

Extra recipe: When the Thermomix bowl has been emptied of the caramel, add a cup of milk (and potentially some ice) and blend 1 min/speed 10. The most delicious caramel milkshake!
