Garlic and Cheese Triangles
A little pastry parcel filled with ooey gooey melty cheese is always great with drinks. These can be prepped in advance and frozen! These are not samosas but have the same principle. A little crunchy parcel filled with complete gooey deliciousness. They are a little fiddly. But so worth it!

Once the pastries are rolled and brushed with butter you could freeze them un-baked. To bake, preheat oven and put them frozen straight onto a lined tray. Bake as directed but add about 5 minutes to the baking time.

Need
- 1 Pack frozen filo pastry, thawed
- Handfuls flat leaf parsley leaves
- 6 cloves garlic
- 1 lemon, zest finely grated
- 80 Grams fresh lemon juice
- 100 Grams Greek feta, cubed
- 100 Grams parmesan cheese cubed
- 100 Grams soft cheese of choice, cubed (we used Swiss)
- 200 Grams butter BUY

Preheat oven to 200°C and line a large baking tray with paper.

Unwrap the filo and place under a dampened tea towel to prevent it drying out.

Place parsley, garlic, lemon zest and juice into the Thermomix bowl and chop 5 sec/speed 6.

Scrape down sides of bowl and add cheeses and 25g of the butter.

Blend 20 sec/speed 8 until a paste forms.

Melt the remaining butter in the microwave or on a stovetop.

To assemble the triangles, butter 1 piece of filo using a pastry brush. Layer a second piece of pastry on top and brush generously with butter.

Slice the layered pastry into strips.

Dollop a reasonable amount of the filling at the bottom of a strip of pastry and fold into a triangle, repeating the fold until you have finished the strip of pastry. Brush each with more butter and place onto the tray.

Repeat until you have finished using all the filling.

Bake 12 minutes until golden and fragrant. Serve hot.
