Greedy Nanny’s Granola Chocolate Coconut Slice
When you combine delicious granola slice with a coconut filling and chocolate topping, what’s not to love? A treat the whole family will devour.
I love what I do...and part of doing what I do is meeting and making new friends through our common love of food or cooking! So it was with great pleasure that I finally met the brain behind Greedy Nanny’s Granola. Paula buys a LOT of vanilla from me. I’m talking litres of that beautiful Heilala vanilla bean paste that I rave on about. SO, I had to ask didn’t I?
I thought she was selling it on the black market...turns out it was for her beautiful granola that should all go and try! It is better than homemade, cos you don’t have to make it and it tastes as good as if you did! Delivered to your door! Gotta love that.
This recipe is starring that granola, I used the chocolate flavour, but that is purely optional. You could use any of the range.

Base
- 75 Grams butter BUY
- 60 Grams honey
- 1 Teaspoon vanilla bean paste BUY
- Pinches pink salt flakes BUY
- 350 Grams Greedy Granny’s Cacao Crunch Granola

Coconut Layer
- 150 Grams coconut oil
- 25 Grams honey
- 2 Teaspoons vanilla bean paste BUY
- Pinches pink salt flakes BUY

Chocolate Drizzle
- 200 Grams chocolate dark, in pieces BUY
- 20 Grams coconut oil

Preheat oven to 170°C and butter a 16cm square tin. Set aside.

To make the base, place butter, honey, vanilla and salt into the Thermomix bowl and cook 4 min/Varoma/speed 1/MC off.

Add the granola and stir 4 sec/Reverse/speed 1.

Press into prepared tin and bake 22 minutes until bubbling and fragrant. It will still appear to be soft, but cool completely before continuing.

To make the coconut layer, place all ingredients into Thermomix bowl and blend 20-30 sec/speed 7. Stop and scrape down sides of bowl and lid as required. Add time as required to smooth the texture.

Press this mixture onto the cold base and refrigerate.

Melt chocolate in the microwave on a high setting in 20 second bursts. Stir each time until all chocolate is melted. Add the coconut oil and stir through to melt. Pour this over the cold coconut base and tap tin on the bench firmly to level the chocolate. Chill and cut into squares to serve.
