Mulled Winter Wine or Glühwein
When in Europe during the winter, this is the fragrance you can literally smell everywhere you go. I do love the Winter Markets of Europe. It is freezing cold, (usually snow on the ground) and people are rugged up and it is dark by around 4pm, but it seems the whole world is out tramping the cobbled streets, eating, shopping and drinking glühwein. Mulled spiced wine. It is the drink of choice though hot chocolate and coffee do a pretty good showing as well.
This is perfect for a cold night if you are entertaining. The great thing about it is that you can make it and let it simmer for days if needs be. You can just keep adding more wine/juice/brandy to the slow cooker. Go Glühwein something. Immediately!

Need
- 150 Grams raw caster sugar BUY
- 150 Grams water
- 1 Teaspoon ground cinnamon
- 60 Grams brandy
- 2 oranges, zest and juice
- 2 lemons zest and juice
- 1 cinnamon stick(s)
- 3-4 star anise
- 20 whole cloves
- 1 pink lady apple, sliced thinly
- 2 x 750 Milliliters red wine
- 1 x 750 Milliliter pomegranate juice
- 50 Grams raisins
- 50 Grams sliced almonds, toasted until golden

Place sugar, water, ground cinnamon, brandy, zest and juice into Thermomix bowl and cook 8 min/100°C/speed 1.

Transfer syrup to slow cooker. Add remaining ingredients. Cook on high temp setting for an hour. The flavour will improve over several hours, and this will also make your house smell amazing.

Strain before serving hot, with a few of the raisins and almonds in the cup, but leave the remaining solids in the slow cooker to keep infusing.
