Mushroom Tacos
Delicious plant based tacos, (or add feta and just go with vegetarian!) We loved these. Add all the mushrooms you love!

We served them with a family favourite, Spicy Mexican Salsa. This time I purchased the flour tortillas, but we also have some great recipes for those:
Masa Harina and EVOO Tortillas

Need
- 1 Gram brown onion peeled and halved
- 4 cloves garlic peeled
- 1 red chilli de seeded
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY
- 1 Teaspoon smoked paprika
- 1 Teaspoon garlic powder
- 1 Teaspoon ground cumin
- 1/2 Teaspoon ground turmeric
- pink salt flakes and pepper to taste BUY
- 1 Teaspoon raw caster sugar BUY
- 500 Grams Swiss brown mushroom(s) quartered
- 500 Grams cherry tomatoes
- 8 Spinach or Chilli Paprika Flour Tortillas small Recipe

Garnishes
- Spicy Mexican Salsa to taste Recipe
- feta cheese crumbled
- sliced avocado
- sliced spring onions
Do
- 1
Place onion, garlic, chilli and EVOO into the Thermomix bowl. Chop 3 sec/speed 6. Saute 5 min/Varoma/speed 1.

Add dry spices and cook 2 min/Varoma/speed 1.

Insert Butterfly. Add salt, pepper, sugar, mushrooms and tomatoes. Cook 30 min/Varoma/speed soft.

Assemble tacos adding salsa, feta, avocado, spring onions to taste.
