Peach and Maple Iced Tea Syrup

This syrup is subtle and delicious and would make a lovely gift. Serve it with your favourite iced tea or as a drizzle on ice cream.

This drink is so refreshing on a hot summers day and dare I say it, I can feel myself getting all Gone with Wind on this one. Just need the large verandah and a wide brimmed straw hat. (Oh and Clark Gable of course!)

You can easily double the mixture. The syrup will keep really well in the fridge for at least a month. Imagine gifting this to someone in a pretty stoppered glass bottle, with some white wine and a box of tea to go with! Elegant, and frankly my dear....they will give a damn.

Need

  • Syrup
  • 5-6 peaches, cut in pieces, stone removed
  • 100 Grams pure maple syrup
  • 200 Milliliters water
  • 1 Tablespoon vanilla bean paste vanilla bean paste BUY
  • To serve;
  • Chilled brewed tea of choice
  • Lemon juice to taste
  • lemonade or sparkling water to taste
  • vanilla bean vanilla beans to garnish BUY
  • Ice to taste

Place all syrup ingredients into Thermomix bowl and cook 10 min/80°C/Reverse/speed 1. Allow fruit to macerate in this liquid for 24 hours in the fridge.

Strain out solids and reserve peaches for other use. (Think as fruit on cereal, as an addition to ice cream or just eat them!!)

To serve. pour about 1/4 glass of syrup, top with either tea, lemonade, sparkling water and add lemon juice to taste. Serve with a vanilla bean as a stirrer. Serve with plenty of ice.
