Bircher Muesli

I used to make this for my growing hungry horrors for years. It was kind of a fave breakfast for them. You really just need to think about it the night before and shock horror, you can use purchased orange juice if you wish. It is super simple to double, triple or quadruple and that has been known to happen at our house. Then go mad with all the toppings. My kids would also come home from school and eat the leftovers. It really does do BIG family duty. No Thermomix required on this one, though you can use it. If you are a Thermomix free family, just get out the good old fashioned grater, or use a food processor. Breakfast is Birchered!!

(And if you suddenly feel like hiking the Swiss alps after consuming this, that would be because the creator of the original Bircher Muesli in 1900 was Swiss physician Maximilian Bircher-Brenner for his patients and is still a very popular breakfast throughout Switzerland and Germany and now right here on Tenina.com. The original recipe called for much more fresh fruit than grain and soaked the raw oats overnight since they took some time to soften, which is how I know it as well.)

Need

  • 200 Grams rolled oats (not quick oats)
  • 1-2 oranges, juice and zest (min 400g juice)
  • 2 Teaspoons vanilla extract BUY
  • 1 Pinch pink salt flakes BUY
  • 1 whole green apple, quartered
  • 1 Handful craisins or raisins
  • 100 Grams almonds slivers BUY
  • pot set yoghurt to taste Recipe
  • 200 Grams pure cream
  • 1-2 Teaspoons ground cinnamon to serve
  • fresh honey to serve
  • Shredded coconut flakes to serve
  • Other fresh or dried fruit or nuts and seeds of choice to serve

Place oats and orange juice into a non reactive bowl and add vanilla and pink salt flakes. Give it all a good stir, cover and refrigerate overnight.

Grate the apple either in a Thermomix (4 sec/speed 5.) or using a traditional grater. You need the skin and seeds, entire thing. Add to the oats mixture with the craisins, almonds, yoghurt, cream, cinnamon and give it all a good stir.

When you are ready to serve, make sure you have all the toppings laid out so people can serve themselves.

Serve in large bowls, but you really don't need a lot of the Bircher as much as you need loads of options for toppings. I think this is the original breakfast bowl!
