Cauliflower Buffalo Wings
Make on FrescoWELL....I tasted these a long time ago at a pizza restaurant that has now closed and I have literally thought about them ever since and often. On my recent trip to USA to visit with my son, my request was that we find Buffalo Cauliflower Wings...no go where he lived. So when we had to do a bunch of Vegetarian recipes for Drop this was a no brainer as we already have literally the best BBQ sauce recipe in existence available. We did some in the oven, by the way and some in the Air Fryer...and I think pretty much the same result, just quicker in the Air Fryer, but a smaller volume...which could be a good thing!

Dry Rub
- 1 Tablespoon baking powder
- 1 Teaspoon dried red chilli flakes
- 1 Teaspoon garlic powder
- 2 Pinches pink salt flakes BUY
- 1 Teaspoon smoked paprika
- 30 Grams Extra Virgin Olive Oil (EVOO) BUY
- 1 cauliflower, cut into large florets

Blue Cheese Dip
- 1 cloves garlic
- 100 Grams blue cheese
- 120 Grams sour cream
- 80 Grams Easy Thermomix mayonnaise Recipe
- juice of half a lemon
- 1 Pinch pink salt flakes BUY
- 1 Pinch black pepper
- 2 stalks of celery, diced

Smoky BBQ Sauce
- 1 small carrot, roughly chopped
- 1 red onion halved
- 4 cloves garlic
- 40 Grams butter BUY
- 500 Grams passata sauce
- 3 Teaspoons smoked paprika
- 100 Grams coconut sugar
- 40 Grams chipotle chilli in adobo sauce
- 100 Grams soy sauce
- 20 Grams garlic powder
- 2 Teaspoons pink salt flakes BUY
- 150 Grams tomato paste
- 30 Grams balsamic vinegar

Serve with
- 4 stalks of celery, cut into sticks

Preheat oven to 180°C. Line an oven tray with baking paper.

Place cauliflower florets in a large snap lock bag. Place all dry rub ingredients, except for the EVOO, into the Thermomix bowl and mill 6 sec/speed 8. Pour into the snap lock bag with the cauliflower and drizzle the EVOO in. Shake bag around until all the cauliflower is totally coated.

Place onto the prepared oven tray and cook for 25-35 minutes. Time will depend on the size of your florets.

Make Blue Cheese Dip;

Place garlic clove into the Thermomix bowl and chop 4 sec/speed 7. Scrape sides of bowl. Add remaining ingredients, except celery, and combine 5 sec/speed 4.

Add celery and combine with spatula.

Make Smoky BBQ Sauce;

Place carrot, onion, garlic and butter into the Thermomix bowl and chop 6 sec/speed 7.

Add remaining ingredients and blend 10 sec/speed 4. Cook 60 min/80/speed 1/MC off.

Serve Cauliflower Buffalo Wings with Blue Cheese Sauce, Smoky BBQ Sauce and celery sticks.

These can alternatively be cooked in an air fryer for 8 minutes at 200°C.
