Coconut Waffles with Salmon and Smashed Avocado

If you don't like smoked salmon, use some cooked bacon, or ham, or sliced tomatoes, or cooked mushrooms, some grated gruyere or any other cheese, top with a beautiful poached egg...and some mascarpone. Or go sweet and use lots of butter and maple syrup. The perfect Sunday breakfast. At your service.

Waffles
- 280 Grams flour
- 1 Teaspoon baking powder
- 40 Grams shredded coconut
- 400ml Tins coconut cream (reserve a little for topping) Recipe
- 1 Pinch pink salt flakes BUY
- 3 eggs
- 20 Grams coconut sugar
- 70 Grams butter melted BUY

Toppings
- Guacomole or just Smashed Avocado Recipe
- Smoked salmon slices
- 4-6 sliced spring onions
- Lime wedges

Place all waffle ingredients into Thermomix bowl and blend 20 sec/speed 8. Scrape down sides of bowl and repeat. Allow batter to rest for around 20 minutes.

Repeat blending process.

Heat waffle iron. Place approx 1⁄4-1/2 cup mixture into the middle of the waffle iron and cook until golden.

Top with Smashed Avocado, salmon slices, a few spring onions and a drizzle of the reserved coconut cream and serve with a lime wedge!

To make Smashed Avocado, simply peel and pit a couple of ripe avos, mash with a fork with salt, pepper and lime or lemon juice to taste.
