Pour 300g of cream into the Thermomix bowl and add the coffee powder/granules.

Heat 8 min/80°C/speed 2 Allow to cool in the Thermomix bowl for at least 20 minutes.

Remove from the bowl and refrigerate until completely cold. (This part can be done up to 3 days in advance.)

Place all ingredients including the coffee cream into the Thermomix bowl and insert the Butterfly. Whip to soft peaks, 20-40 sec/Butterfly/speed 4.

Keep refrigerated until use.

To pipe into the profiteroles, scrape into a piping bag with a small sharp nozzle and then insert the nozzle into the base of the profiteroles squeezing until the profiterole feels full.
