Jalapeno Popper Dip
Jalapeno poppers are a bit of a fiddle, but you don't have to miss out on the flavour, here is the dip version and too easy!
Jalapeno poppers are like a surprise party in your mouth. You think you're just going to have a regular ol' jalapeno, but nope, it's stuffed with cream cheese and deep fried to crispy perfection. It's like the jalapeno said, 'Hey, let's spice things up a bit,' and the cream cheese was like, 'Hold my beer.'
But who can be bothered making them from scratch?? Not me. So a dip was the next best thing...(now who is saying, hold my beer?) All the flavour, all the heat, all the crispy (hello corn chips)!
As it happens I have a very prolific jalapeno bush going crazy in the garden (crickets won't touch it, which is a bonus) and so I am having to come up with ideas to use them that won't burn me completely. This only uses two and I have to say, you could cut it down to just one if you are a bit of a chilli sook. It did disappear very quickly though...but then, what's not to love? The life of the party!

Need
- 200 Grams bacon diced and fried in a little oil.
- 100 Grams provlone cheese, cubed
- 100 Grams mature cheddar cheese cubed
- 60 Grams parmesan cheese cubed
- 2 cloves garlic
- 1 red onion peeled and halved
- 2 jalapeno
- 100 Grams Easy Thermomix mayonnaise Recipe
- 120 Grams sour cream
- 1/2 Teaspoon smoked paprika

Preheat oven to 180°C.

Cook bacon and set aside.

Place cheeses into the Thermomix bowl. Mill 10 sec/speed 10. Set aside.

Place garlic, red onion and jalapenos into the Thermomix bowl. Chop 5 sec/speed 6.

Add remaining ingredients including cheese (reserve a little cheese for topping). Combine 10 sec/speed 2. Finish combining with a spatula.

Pour into a small baking dish. Sprinkle with reserved cheese. Bake for 20 minutes.

Serve with corn chips and or veggies of choice for dipping.
