Oyster Crackers

Crackers are traditionally served with chilli, soup or chowder in the USA. Oyster crackers are small, usually hexagonal shaped plain crackers that contain no oyster whatsoever, but perhaps resemble an oyster in shape, slightly, if you are partially blind, wearing sunglasses in a dark room. They are similar in flavour to saltine crackers. In this recipe we have suggested some flavour additions so that you can benefit from making them for more than an accompaniment to soup. I mean who doesn't love going a little crackers from time to time?

TASTE:

For cheese crackers, sprinkle crackers before baking with finely grated parmesan. For pizza crackers, sprinkle crackers before baking with Pizza Breadsticks Seasoning.

Preheat oven to 180ºC.

Place all ingredients except the water into the Thermomix bowl and mix 10 seconds/speed 7.

Add water and knead 30 seconds/Interval or until dough forms a ball.

Place ball of dough onto a sheet of baking paper and cover with a tea towel. Rest for 15 minutes.

Roll out dough into a rectangle 3mm to 4mm thick between two sheets of baking paper. If sticking, use a little flour. Depending on the size of your baking tray, you may need to divide the dough in half.

Carefully peel off the top layer of paper and transfer the rolled out dough along with the bottom layer of paper onto the baking tray.

Score the dough with a knife/pizza cutter and ruler into 1-centimetre squares.

Sprinkle with toppings of choice (see Taste) while the dough is still quite soft, if possible.

Bake crackers for approximately 15 minutes until just lightly golden. Turn off oven, open the door a little and leave the crackers to sit in the oven for 20 minutes.

Take crackers from the oven and carefully break apart. Return to oven and leavein closed oven until completely cool or overnight.

Store in an airtight container.
