Peanut Butter Overnight Oats with Cardamom
I'm all about making life easier...and this is super simple to make up in advance for the week ahead. They will improve over a few days (leave the fresh fruit off the top and just finish off in the morning.) Of course, you can change it all up a bit by adding in raspberry coulis, any fruit or nut butter of choice, other spices of flavours to suit your family faves and then don't just use regular oats. Try using rolled quinoa or buckwheat flakes or other grains or seeds that you love.

Need
- 250 Grams rolled oats
- 2 Tablespoons Black Chia Seed(s)
- 1 Pinch pink salt flakes BUY
- 2 Drops doTERRA cardamom oil (or a pinch of dried cardamom)
- 500 Grams Almond Milk or other plant based milk Recipe
- 3 Tablespoons pure maple syrup
- 1 Tablespoon vanilla extract BUY
- 1 banana
- 2 Tablespoons Peanut Butter Recipe
- fruit of choice to serve

Combine the oats, chia seeds and salt in a large bowl.

Place cardamom oil, milk, maple syrup and vanilla extract into the Thermomix bowl and warm 3 min/50°C/speed 3.

Pour out into the oat mixture and stir well to fully wet the ingredients.

Arrange some sliced banana at the bottom and sides of two glasses. Top with 1/4 of the oat mixture. Add some more fruit of choice, more oats, and repeat in layers until the glasses are full. Top with some peanut butter, and finish with fruit. Cover and refrigerate the jars overnight. Ready to serve in the morning, no wait time!
