Pineapple Margarita

This is like sipping on a cloud of salty deliciousness. Frothy, pineapple-ey and fresh. We present the Pineapple Margarita, with or without the headache juice.

Need
- 1 limes juice only
- 1 Tablespoon pink salt flakes BUY
- 1 Cup ice
- 120 Grams pineapple juice
- 60 Milliliters Lyre's Orange Sec (or triple sec)
- 60 Milliliters Lyre's Agave Reserva Spirit (or tequila)

The Meringue
- 75 Grams egg whites
- 150 Grams raw caster sugar BUY

Dip 2 glasses in lime juice, then in salt flakes. Reserve remaining lime juice.

In a shaker, combine ice, pineapple juice, lime juice and the Lyre's spirits. Shake shake shake!

Pour into the salt rimmed glasses.

To make the meringue, Place egg whites into a very clean and dry Thermomix bowl with another pinch of salt flakes and whip 4 min/37°C/Butterfly/speed 3/MC off.

Wipe off moisture from lid and top portion of the bowl with paper towel as necessary.

Slowly add the sugar through the hole in lid 6 min/Butterfly/speed 3/MC off.

Place a tablespoon of meringue on top of each cocktail.

Remaining meringue can be piped onto trays and baked at 100°C for 45 minutes.
