I love Mexican food, there is a Mexican ebook with my name on it, if you weren't up to speed with that one. SO many great flavours that are fresh and authentic as well as a few made up by me, that are my take on Mexican ideas. Paletas have come into their own in Australia of late, I have seen them a few times at night markets or foodie events. But nothing beats your own. Don't stop at pineapple...try your fave fruits and see!
