Who is Tom Collins?
The Tom Collins has a spirited history dating back to the 19th century. Originally appearing in London’s gin palaces, it was made with Old Tom gin, a slightly sweeter style that gave the drink its name. By the 1870s, the Tom Collins had crossed the Atlantic and become a fixture in American cocktail culture, especially after the so-called “Tom Collins Hoax”, a running joke that sent people searching taverns for a man named Tom Collins. Over time, the classic mix of gin, lemon, sugar and soda has inspired countless variations, from elderflower and cucumber twists to modern probiotic or herbal takes, like this Lavender Collins, where fermentation meets floral elegance.

Need
- ice as needed
- 4 parts pink gin
- 1 part lime juice
- 6 parts Pro-Biotic Lavender Lemonade Recipe
- 1 lavender flower and slices of lime for garnish
- tonic water to top up glasses
Do

Fill 2 tall glasses with ice.

Half fill your cocktail shaker with ice. Add all remaining ingredients except tonic. Shake well.

Strain into glasses and top up with tonic.
