There's something undeniably nostalgic about a tall glass of Cherry Coke for me, it takes me back to my teenage years and living in the USA, that whole drugstore vibe, meet the cute boys after school and have a cherry coke, or cherry float (just add Killer Vanilla Ice Cream) that deep, fruity sweetness threaded through ice-cold cola is pure comfort. But once you've tasted a version made with your own cherry syrup, there's no going back to the can. This recipe uses fresh or frozen cherries simmered into a rich, glossy syrup that you stir right into sparkling cola for a drink that's vibrant, customisable, and genuinely impressive.
Whether you're hosting a backyard BBQ or just treating yourself on a slow afternoon, this homemade Cherry Coke comes together in minutes and hits every note, sweet, tart, fizzy, and deeply satisfying. I am officially a fan!

Need
- 100 Grams coconut sugar
- 50 Grams pure maple syrup
- 3 cinnamon stick(s) broken into long pieces
- 1 each lemon, lime and orange, juice and rind
- 10 Grams fresh ginger peeled and sliced
- 1/2 Teaspoon fresh nutmeg grated
- 1/2 Teaspoon cloves
- 1/2 Teaspoon ground cardamom
- 1/2 Teaspoon ground ginger
- 3 star anise
- 1 Tablespoon black peppercorns
- 1 Cup pitted cherries, fresh or frozen
- 1 Teaspoon bitters
- 1 Teaspoon vanilla bean paste BUY
- 1 Teaspoon almond extract
- garnish of choice, citrus slices, mint leaves or maraschino, fresh cherries or all of them!

Place coconut sugar and maple syrup into the Thermomix bowl. Cook 8 min/Varoma/speed 2/splatter guard.

Add all remaining ingredients, except vanilla and almond extract. Cook 15 minVaroma/reverse/speed soft*. Let sit to infuse for 10 minutes.

Strain and cool. Discard bits. Stir through vanilla and almond extract.

Serve, over ice, diluted with sparkling water to taste.
