We are a little late to the party on this one, but here it is. Dalgona coffee was made insta famous during the pandemic, (so five minutes ago now). But we only just decided to get our ducks in a row and finally made it. After a little research, it is interesting to know that coffee lovers in India have been making this for years with whipping sessions lasting as long as 30 minutes in some instances to get the right frothy finish where it is called 'Beaten or Phenti' coffee.
Enter Thermomix.
We did it in 4 minutes, it is frothy in less than 4 minutes, but go the distance if you have the time.
While it is mixing, either heat your milk or get the iced milk ready.
The good thing about this recipe is that you can easily double, triple or quadruple. Perfect for dinner partying we think. And a little bit flash! We tried it with instant hot chocolate mix, it wasn't terrible, but definitely not the same caramel hued magic of the coffee. The resulting mousse is pretty intense, but keeps well in the fridge for a few days. Dollop into any hot drink for a little hit of coffee magic. Hope you enjoy!

Need
- 2 Tablespoons instant coffee granules
- 2 Tablespoons coconut sugar
- 2 Tablespoons boiling water
- 1 Pinch pink salt flakes BUY
- 1/2 Teaspoon vanilla bean paste BUY
- Hot or cold milk to serve

Place all ingredients into the Thermomix bowl and insert butterfly.

Whip 4 min/Butterfly/speed 4.

Meanwhile, heat your milk, or get iced milk ready in glasses. Dollop the frothy coffee on top of milk of choice, give it a quick stir and you're sipping your ultra trendy coffee in no time. Great summer or winter.
