Chilli Lime Tacos with Chorizo!

If it is Mexican, Thai, Italian, involves cheese, (or as you know can be classed as dessert), I am there! This is Mexican in origin and involves cheese, so a big hitter.

We made the tortillas and the queso, but you don't have to do either of those things yourself. Though it is kind of fun to go the whole way and the kids would probably love to help if you did. Then wrapping the filling up sort of makes it an enchilada, though an unbaked one with no additional sauce, not that we wouldn't go that way...by all means give it a whirl. Two recipes for the price of one.

Place onion, salt and lime juice into the Thermomix bowl and chop 3 sec/speed 5.

Set aside and allow to marinate for a couple of hours if possible.

Place rice into simmering basket with sweet potato on top, add water to Thermomix bowl, insert basket and cook 15 min/Varoma/speed 3. Double check the sweet potato is well cooked, it should easily crumble with the back of a fork. Cook longer if needed, it won't hurt the rice at all. Set aside and empty water from bowl.

Place chillies into Thermomix bowl and chop 4 sec/speed 6.

Add chorizo and sauté 10 min/Varoma/Reverse/speed 1. Spoon off excess fat if desired and add rice and sweet potato to Thermomix bowl. If you prefer, this step can be done in a lot less time in a hot frying pan over a medium high heat.

Stir gently 5 sec/Reverse/speed 1

Cook one tortilla at a time over a direct flame for 10-15 seconds on each side, or in a dry hot fry pan. Arrange on work surface.

Divide the chorizo mix between tortillas, top with red onion and lime relish, crumbled feta and fresh coriander. This is the perfect excuse to bring out the best guac ever. Linked below!

Wrap tightly and cut in half to serve or just have it with a good squeeze of lime and some guac. Be prepared for messy but delish.
