Super simple, get that knife out and you're practically done. Salivating about this recipe, it is so delish.

This super simple salsa was originally created for the Asado Pork Rolls with Mojo Sauce but don't let that stop you from making it in it's own right and eating with corn chips, on tacos or as a great side accompaniment for fish or chicken. You could add avocado if you wished, we love all those flavours together.

Prepare the mango over and into a large serving bowl so you keep all of the juice.

Dice the shallot, and chop the coriander leaves and stalks. Add to the mango.

Season with chilli flakes and pink salt flakes, add the lime juice and toss gently to combine.

Add coconut flakes just before serving.
