TIP:

You can find tins of chipotles in adobo sauce at most independent grocers that stock Mexican foods. The adobo sauce is very important. It is smoky, hot and acidic and hard to duplicate. Use the amount required and freeze the rest of the contents in a zip-lock bag, breaking off pieces as needed for other recipes.

Place chipotle in adobo sauce into the Thermomix bowl and chop 3 sec/speed 7.

Add remaining ingredients and blend 10 sec/speed 2.

Store in airtight jar in the fridge until use.
