This is sour cream that got a bit posey and decided to go all Spanish. It’s fantastic with all things Mex or Tex Mex; there are loads of ways you will end up using this recipe. See our list of possibilities HERE:

TIP:

You can find tins of chipotles in adobo sauce at most independent grocers that stock Mexican foods. The adobo sauce is very important. It is smoky, hot and acidic and hard to duplicate. Use the amount required and freeze the rest of the contents in a zip-lock bag, breaking off pieces as needed for other recipes.

Place chipotle in adobo sauce into the Thermomix bowl and chop 3 sec/speed 7.

Add remaining ingredients and blend 10 sec/speed 2.

Store in airtight jar in the fridge until use.
