Festive Spicy Salt

When you need a little extra kick to anything, this will do it for you. It is perfect to use as a rub for pork, beef, chicken, fish. It is also really pretty and would make a fantastic gift. Little jars of flavoured salt and sugar are kind of cute for the foodie in your life. Team it up with a 2019 Calendar and you are the friend of the year! Christmas gifting sorted!

Need

  • 2 star anise
  • 1 tsp coloured peppercorns
  • 1/2 tsp cardamom seeds
  • 3-4 cloves
  • 1/2 cinnamon stick
  • 1/2 tsp fennel seeds
  • 100 g Pink Salt Flakes BUY

Do

1  

Place all spices (not the salt) into saucepan and dry toast on high heat until just smoking. Cool slightly.

Place into Thermomix bowl and mill 10 sec/speed 8.

Add salt flakes and blend 6 sec/speed 6 for a coarse blend or 10 sec/speed 10 for a fine blend.

4  

Rub into pork skin, chicken or fish fillets before cooking.

5  

Store in an airtight container. Will keep indefinitely.
