When you need a little extra kick to anything, this will do it for you. It is perfect to use as a rub for pork, beef, chicken, fish. It is also really pretty and would make a fantastic gift. Place all spices (not the salt) into saucepan and dry toast on high heat until just smoking. Cool slightly.

Place into the Thermomix bowl and mill 10 sec/speed 8.

3  

Add salt flakes and blend 6 sec/speed 6 for a coarse blend or 10 sec/speed 10 for a fine blend.

4  

Rub into pork skin, chicken or fish fillets before cooking.

5  

Store in an airtight container. Will keep indefinitely.
