Festive Spicy Salt
When you need a little extra kick to anything, this will do it for you. It is perfect to use as a rub for pork, beef, chicken, fish. It is also really pretty and would make a fantastic gift. Need
- 2 star anise
- 1 Teaspoon coloured peppercorns
- 1/2 Teaspoon cardamom pods
- 3-4 cloves
- 1/2 cinnamon stick(s)
- 1/2 Teaspoon fennel seeds
- 100 Grams pink salt flakes BUY
Do

Place all spices (not the salt) into saucepan and dry toast on high heat until just smoking. Cool slightly.

Place into the Thermomix bowl and mill 10 sec/speed 8.

Add salt flakes and blend 6 sec/speed 6 for a coarse blend or 10 sec/speed 10 for a fine blend.

Rub into pork skin, chicken or fish fillets before cooking.

Store in an airtight container. Will keep indefinitely.
