Indian Chilli Cheese Toast (Eggs Kejriwal)
Indian breakfasts are so different to westerners but SO yum! I was amazed at the different options available. I have yet to get more options up here and I will. But in the meantime, try this on for breakfast or lunch! OMG. So good. We all wolfed these down in seconds, burnt roof of mouth no object. Really perfect for a lazy dinner as well. You will love them! Promise.

Need
- 2 thick slices of bread
- butter for spreading BUY
- 2 Teaspoons Yellow Mustard Recipe
- 100 Grams mature cheddar cheese cubed
- 1 red chilli
- 1 Handful fresh coriander or cilantro leaves
- 1/4 red onion
- 2 eggs
- 1 Pinch pink salt flakes BUY
- 1 Pinch black pepper

Preheat oven to 180° and line a baking tray with baking paper.

Butter bread on both sides and lightly fry in a frypan. Smear one side of the toast with mustard.

Place cheese, chilli, coriander and onion into the Thermomix bowl and chop 8 sec/speed 8. Divide the mixture between the toast. Place in the oven for 10 minutes, or until the cheese is melted.

Meanwhile, fry the eggs until the white edges are crisp, but the yolks are still soft. Slide an egg on top of each toast.

Serve hot with additional chillies on top.
