Spiced Passionfruit Syrup

We totally love this. I could drink it. (I may have, but admitting nothing right here in public.)

Seriously so good. It is the perfect dessert syrup to have up your sleeve for unexpected visitors, pull it out and slather on ice cream, waffles, crepes, custard or more importantly, fried custard! (Look out for that one!)

It also makes an excellent drink. Add sparkling water to dilute, then alcohol of choice...think white rum for a spiced mojito of some sort, vodka, gin, they all go well...bit yum!

I have plans for this one...pretty sure you will see it in many forms through the coming months. Enjoy! Here are a few ideas so far:

Place ginger, turmeric and lemon zest into the Thermomix bowl and chop 4 sec/speed 6.

Add all remaining ingredients, except passionfruit, and cook 20 min/90°C/speed soft.

Strain and discard the bits. Add passionfruit pulp to the syrup.
