Spicy Yemeni Green Sauce with Probiotic Benefits
Make this vibrant fermented zhug quickly and easily at home! A fiery Yemeni green sauce with chili, garlic, herbs, and spices that gains depth, tang, and probiotics through fermentation. Perfect for adding heat and flavour to everyday dishes.
Serving Suggestions
Swirl into hummus or labneh for extra zing
Drizzle over roasted vegetables or grilled meats
Stir through soups, stews, or lentil dishes for spice and tang
Spread on sandwiches, wraps, or flatbreads
Toss with roasted potatoes or chickpeas
Add to salad dressings or marinades for a fermented kick
Serve alongside falafel, shawarma, or kebabs
Mix with olive oil for a spicy dipping sauce

Need
- 5 cloves garlic peeled
- 2 Bunches fresh coriander or cilantro
- 2 Bunches flat leaf parsley
- 3 green chilli(es)
- 2 Pinches pink salt flakes BUY
- pepper to taste
- 1/2 Teaspoon ground cumin
- 1/2 Teaspoon ground coriander
- 1/2 Teaspoon sumac powder
- 1/4 Teaspoon ground cardamom
- 80 Grams fresh lemon juice

Place all ingredients in the Thermomix bowl. Press turbo a few times until evenly minced.

Spoon it into a jar (make sure there's space between the Zhug and the lid). Place a piece of baking paper directly onto the Zhug and place lid on loosely.

Leave on the kitchen bench to ferment for 2 days. It will lose its bright green hue and become more muted. Refrigerate.
